Our family enjoys dessert after dinner, but I cringe at buying a prepackaged cookies. Not to mention the ingredients EEEK😬
If you can spare 1 hour, you can have a yummy easy chocolate dipped macaroons.
Don’t worry about running around town for ingredients, we have everything you need in store. Be sure to bring your jars!
Ingredients
1 3/4 cup shredded coconut
3 tbsp maple syrup
3 tbsp coconut oil
1/2 cup almond flour
1 tsp vanilla extract
1 cup chocolate chips
Place coconut, maple syrup, coconut oil, flour, vanilla together in a food processor and pulse until well combined. Mixture should clump together when pressed together.
Line a baking sheet with parchment paper OR use a silicone mat. With your hands, form small balls of the coconut mixture (bit smaller than a golf ball) and place on baking sheet. Refrigerate for about 1 hour.
Creating a double boiler, warm chocolate chips until completely melted. Alternatively, you can melt chocolate chips in the microwave until melted.
Remove cooled coconut balls from refrigerator, and dip in melted chocolate - one at a time. Once dipped, return the macaroons to the lined baking sheet and return the sheet to the fridge until the chocolate has set...try not to eat them until they're ready 🤤
